I bought something yesterday that took me back at least 35 years.....Trader Joe's Caramelized Onion Dip. I remember this flavor from when I was a child/teenager. I believe the brand was French's. The dip came in a foil cup with a peel away foil lid. Apparently someone like Kraft bought this brand and poof! gone was the outrageously divine onion dip! The artificially flavored onion dip found in the typical grocery store today is just gross! I thought that dip was gone forever! Thanks Trader Joe's, now I have something scrumptous to dip my pork rinds in!!

Heat the oil in a medium sized skillet over medium heat. Add the onions; stir to coat. Cook the onions for 2-3 minutes or until slightly tender.Reduce the heat to medium low. Continue cooking, stirring occasionally until the onions reach a rich amber color, 20-30 minutes, stirring constantly during the last 5 minutes or so.Place the caramelized onions in a bowl and set aside to cool.In a medium sized bowl, whisk together the mayo and sour cream. Stir in the cooled caramelized onions, green onions, salt, and pepper.Cover the dip and place in the refrigerator for at least 2 hours or overnight to let the flavors blend together.Just before serving, garnish with additional green onions. Serve with potato chips or crusty bread.
